  • 3 tbsp fish sauce

  • 2 tbsp soy sauce

  • 2 tbsp brown sugar

  • 2 cloves garlic, minced

  • 1 shallot, finely chopped

  • 1 stalk lemongrass, minced (optional)

  • 1 tbsp lime juice or rice vinegar

  • 1 tbsp neutral oil

  • 1/2 tsp black pepper

Instructions

  • Whisk marinade ingredients together.

  • Marinate chicken in fridge for at least 1 hour or overnight.

  • Grill or pan-fry chicken 4–6 mins per side until cooked through.

  • Rest 5 minutes before slicing.

  • Serve with rice, noodles, or in bánh mì.
