1.5–2 lbs boneless chicken thighs
3 tbsp fish sauce
2 tbsp soy sauce
2 tbsp brown sugar
2 cloves garlic, minced
1 shallot, finely chopped
1 stalk lemongrass, minced (optional)
1 tbsp lime juice or rice vinegar
1 tbsp neutral oil
1/2 tsp black pepper
Whisk marinade ingredients together.
Marinate chicken in fridge for at least 1 hour or overnight.
