Ingredients

2 cups cooked shredded chicken
8 small flour tortillas
2 cups red enchilada sauce divided
2 cups shredded cheddar or Monterey Jack cheese divided
1 small onion diced
2 cloves garlic minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional chopped cilantro for garnish

Instructions

  • Preheat oven to 375°F and grease baking dish.

  • Sauté onion in olive oil until softened.

  • Add garlic and cook briefly.

  • Stir in chicken and 1/2 cup enchilada sauce.

  • Spread thin layer of sauce in baking dish.

  • Fill tortillas with chicken mixture and cheese, roll and place seam-side down.

  • Pour remaining sauce over top and sprinkle with cheese.

  • Bake 20 to 25 minutes until bubbly.

  • Rest briefly and garnish before serving.

Notes

Warm tortillas before rolling if needed.
Add beans or corn for variation.
Store leftovers refrigerated up to four days.
