A deeply flavorful slow cooker Indian beef curry made with tender beef, tomatoes, coconut milk, and aromatic spices. Rich, warming, and ideal for make-ahead meals.
2 lbs beef chuck or stew meat, cut into chunks
1 large onion, diced
4 garlic cloves, minced
1 tbsp fresh ginger, grated
1 green chili, minced (optional)
1 tsp ground turmeric
1 tbsp ground coriander
1 tsp ground cumin
1 tsp chili powder (adjust to taste)
1 tsp salt
1 1/2 cups crushed tomatoes
1/2 cup beef broth or water
3/4 cup full-fat coconut milk (or 1/2 cup plain yogurt)
1 tsp garam masala
Fresh cilantro, for garnish
Optional: Brown beef in a skillet, then transfer to slow cooker.
Add onion, garlic, ginger, green chili, and all dry spices.
Pour in crushed tomatoes and broth. Stir to coat.
Cook on LOW for 7–8 hours or HIGH for 4–5 hours.
In last 30 minutes, stir in coconut milk and garam masala.
Cook uncovered to thicken.
Serve hot with rice, naan, and garnish with cilantro.
