A quick and easy homemade butter chicken with tender chicken simmered in a rich, creamy tomato sauce. Perfect for busy weeknights and cozy dinners.
1½ lbs boneless chicken, cubed
3 tbsp butter
1 onion, finely chopped
3 garlic cloves, minced
1 tbsp grated ginger
1½ cups tomato puree or crushed tomatoes
¾ cup heavy cream
1½ tsp garam masala
1 tsp paprika or mild chili powder
½ tsp cumin
¼ tsp turmeric
1 tsp sugar or honey
Salt to taste
Fresh cilantro for garnish
Cook chicken in a skillet with 1 tbsp butter until lightly browned. Remove and set aside.
Melt remaining butter and sauté onion until soft. Add garlic and ginger.
Stir in spices and toast briefly.
Add tomatoes, sugar, and salt. Simmer 5 minutes.
Stir in cream and reduce heat.
Add chicken back and simmer 5 minutes.
Garnish and serve warm.
Adjust spice to taste. Coconut cream works well for dairy-free.
