A quick and easy homemade butter chicken with tender chicken simmered in a rich, creamy tomato sauce. Perfect for busy weeknights and cozy dinners.

Ingredients

lbs boneless chicken, cubed
3 tbsp butter
1 onion, finely chopped
3 garlic cloves, minced
1 tbsp grated ginger
1½ cups tomato puree or crushed tomatoes
¾ cup heavy cream
1½ tsp garam masala
1 tsp paprika or mild chili powder
½ tsp cumin
¼ tsp turmeric
1 tsp sugar or honey
Salt to taste
Fresh cilantro for garnish

Instructions

  • Cook chicken in a skillet with 1 tbsp butter until lightly browned. Remove and set aside.

  • Melt remaining butter and sauté onion until soft. Add garlic and ginger.

  • Stir in spices and toast briefly.

  • Add tomatoes, sugar, and salt. Simmer 5 minutes.

  • Stir in cream and reduce heat.

  • Add chicken back and simmer 5 minutes.

  • Garnish and serve warm.

Notes

Adjust spice to taste. Coconut cream works well for dairy-free.
