Juicy chicken cooked in one pan with tomatoes, olives, garlic, and herbs for a Mediterranean-style dinner.
1 ½ lb chicken thighs or breasts
Salt and black pepper to taste
1 tsp dried oregano
2 tbsp olive oil
1 small onion, sliced
3 cloves garlic, minced
1 ½ cups cherry tomatoes
½ tsp dried thyme
⅓ cup pitted olives
Juice of ½ lemon
Fresh parsley or basil, chopped
Season chicken with salt, pepper, and oregano.
Brown chicken in olive oil; remove and set aside.
Cook onion and garlic in the same pan.
Add tomatoes and thyme, then return chicken.
Simmer until chicken is cooked through.
Add olives and lemon juice, then serve.
Serve with rice, bread, or roasted vegetables.
