Juicy chicken cooked in one pan with tomatoes, olives, garlic, and herbs for a Mediterranean-style dinner.

Ingredients

  • 1 ½ lb chicken thighs or breasts

  • Salt and black pepper to taste

  • 1 tsp dried oregano

  • 2 tbsp olive oil

  • 1 small onion, sliced

  • 3 cloves garlic, minced

  • 1 ½ cups cherry tomatoes

  • ½ tsp dried thyme

  • ⅓ cup pitted olives

  • Juice of ½ lemon

  • Fresh parsley or basil, chopped

Instructions

  • Season chicken with salt, pepper, and oregano.

  • Brown chicken in olive oil; remove and set aside.

  • Cook onion and garlic in the same pan.

  • Add tomatoes and thyme, then return chicken.

  • Simmer until chicken is cooked through.

  • Add olives and lemon juice, then serve.

Notes

Serve with rice, bread, or roasted vegetables.
