1 cup crumbled feta cheese
1/2 cup ricotta cheese
1 clove garlic minced
1 tablespoon olive oil plus extra for brushing
1 egg beaten
1 teaspoon dried oregano or fresh dill
1/4 teaspoon black pepper
6 sheets phyllo dough

Instructions

  • Preheat oven to 375°F.

  • Sauté garlic and spinach until wilted.

  • Mix spinach with feta, ricotta, egg, herbs, and pepper.

  • Layer and oil phyllo sheets.

  • Cut into rectangles and fill with spinach mixture.

  • Fold into parcels and brush tops with oil.
