Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion are crisp, golden tortillas filled with melty cheese, tender spinach, and sweet red onion for a flavorful and satisfying lunch.

Ingredients

4 large flour tortillas
1 cup fresh baby spinach
1/2 cup crumbled feta cheese
1 cup shredded mozzarella cheese
1/2 small red onion thinly sliced
2 tablespoons olive oil
Optional dried oregano

Instructions

  • Heat skillet over medium heat.

  • Sauté red onion in olive oil for 2 to 3 minutes.

  • Add spinach and cook until wilted; remove from pan.

  • Place tortilla in skillet and sprinkle mozzarella over half.

  • Add spinach mixture and feta.

  • Fold tortilla and cook 2 to 3 minutes per side until golden.

  • Slice and serve warm.

Notes

Drain excess moisture from spinach before assembling.
Adjust cheese amounts to preference.
Serve immediately for best texture.
