4 large flour tortillas
1 cup fresh baby spinach
1/2 cup crumbled feta cheese
1 cup shredded mozzarella cheese
1/2 small red onion thinly sliced
2 tablespoons olive oil
Optional dried oregano
Heat skillet over medium heat.
Sauté red onion in olive oil for 2 to 3 minutes.
Add spinach and cook until wilted; remove from pan.
Place tortilla in skillet and sprinkle mozzarella over half.
Add spinach mixture and feta.
Fold tortilla and cook 2 to 3 minutes per side until golden.
Slice and serve warm.
