Juicy marinated chicken wrapped in warm pita and topped with creamy feta tzatziki and fresh veggies. A flavorful, quick Mediterranean meal perfect for any night.
1½ lbs boneless, skinless chicken thighs or breasts
½ cup Greek yogurt
2 tbsp olive oil
Zest and juice of 1 lemon
3 garlic cloves, minced
1 tsp dried oregano
Salt and pepper to taste
4–6 pita breads
Sliced tomatoes, cucumbers, red onion, and lettuce for serving
Feta Tzatziki:
1 cup Greek yogurt
½ cucumber, grated and squeezed
1 garlic clove, minced
2 tbsp olive oil
Juice of ½ lemon
⅓ cup crumbled feta
Salt to taste
Mix marinade ingredients and coat chicken. Marinate 20 min to 8 hrs.
Combine all tzatziki ingredients and chill.
Cook chicken in skillet over medium-high heat, 5–6 min per side. Let rest, then slice.
Warm pitas and prep vegetables.
Assemble gyros: add lettuce, chicken, veggies, and tzatziki to each pita.
Wrap and serve immediately.
Use dairy-free yogurt and skip feta for a vegan version. Try with grilled lamb or shrimp. Store leftovers in fridge up to 4 days.
