A protein-packed, low-carb chicken zucchini bake loaded with melty cheese and savory flavor. Simple, satisfying, and perfect for meal prep or family dinner.
1½ lbs boneless, skinless chicken breast, diced
2 medium zucchinis, chopped
2 large eggs, beaten
½ cup plain Greek yogurt (optional)
1½ cups shredded mozzarella cheese (divided)
¼ cup grated Parmesan cheese (divided)
2 cloves garlic, minced
1 tbsp olive oil (for greasing dish)
1 tsp Italian seasoning
Salt and pepper, to taste
Preheat oven to 375°F and grease a 9×13-inch baking dish.
Mix chicken, zucchini, garlic, eggs, yogurt (if using), seasoning, salt, and pepper.
Fold in half the mozzarella and Parmesan.
Spread mixture in dish. Top with remaining cheese.
Bake 35–40 minutes until chicken is cooked and top is golden.
Let rest before slicing and serving.
