  • 2 cups elbow macaroni

  • 2 ½ cups low-sodium vegetable or chicken broth

  • 1 cup milk (or unsweetened plant milk)

  • 2 cups small broccoli florets

  • 1 ½ cups shredded sharp cheddar cheese

  • 1/4 cup Greek yogurt (optional)

  • 1/2 tsp garlic powder (optional)

  • Salt and pepper to taste

Instructions

  • In a large pot, bring broth and milk to a boil.

  • Add pasta and cook for 5 minutes.

  • Add broccoli and simmer 4–5 more minutes until pasta and broccoli are tender.

  • Turn heat to low. Stir in cheese, yogurt, garlic powder, salt, and pepper.
