1.5 lbs chicken breasts or thighs
2 large sweet potatoes
3 tbsp olive oil (divided)
2 tbsp lemon juice
3 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tbsp parsley
1 tsp thyme
Salt and pepper to taste
Avocado Salsa:
1 ripe avocado, diced
1/3 cup cherry tomatoes, chopped
2 tbsp red onion, diced
1 tbsp lime juice
2 tbsp cilantro, chopped

Marinate chicken in olive oil, lemon juice, garlic, herbs, salt, and pepper. Chill 30 min–8 hrs.
Cut sweet potatoes into fries, toss with olive oil and spices, roast at 425°F for 25–30 min.
Grill chicken 5–7 min per side until cooked through. Let rest, then slice.
Mix avocado salsa ingredients in a bowl. Chill until ready to serve.
