1½ lbs boneless chicken thighs or breasts, cubed
¼ cup olive oil
3 garlic cloves, minced
Juice and zest of 1 lemon
1½ tsp dried oregano
1 tbsp red wine vinegar (optional)
1 tsp salt
½ tsp black pepper
Combine marinade ingredients and coat chicken. Marinate at least 30 mins or up to 4 hours.
Thread chicken onto skewers.
Grill or broil for 10–12 minutes, flipping halfway, until cooked through.
Rest 5 minutes. Garnish with lemon juice and fresh herbs.
Serve with pita, tzatziki, and sides.
