For Chicken Marinade:
1½ lbs boneless chicken
3 tbsp olive oil
Juice + zest of 1 lemon
3 cloves garlic, minced
1½ tsp dried oregano
Salt, pepper, optional paprika
Grain Base:
2 cups cooked rice, quinoa, or cauliflower rice
Optional: 1 tbsp lemon juice + parsley for flavor
Toppings:
1 cup cucumber, diced
1 cup cherry tomatoes, halved
½ red onion, sliced
½ cup kalamata olives
½ cup crumbled feta
Tzatziki:
1 cup Greek yogurt
½ cup grated cucumber
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp fresh dill
Salt to taste
Marinate chicken for at least 30 minutes.
Cook chicken by grilling, searing, or baking. Rest and slice.
Cook grains and prep toppings.
Mix tzatziki ingredients and chill.
Assemble bowls: grains, chicken, veggies, tzatziki, feta, and garnish.
Serve immediately or refrigerate for meal prep.
Customize with greens, beans, or hot sauce.
