For Potatoes:
1 lb baby gold potatoes, halved
1 tbsp olive oil
Salt, pepper, ½ tsp paprika
For Steak:
1½ lbs sirloin or ribeye, cubed
Salt, pepper, optional garlic powder
1 tbsp olive oil
For Garlic Butter:
3 tbsp unsalted butter
4 garlic cloves, minced
1 tbsp parsley or thyme
Pinch red pepper flakes (optional)
Heat oil in skillet. Cook seasoned potatoes cut-side down for 10–12 mins until crisp-tender. Set aside.
Sear seasoned steak cubes in batches, 1–2 mins per side. Remove and set aside.
Melt butter in same pan. Add garlic and herbs, sauté 1 min.
Return potatoes and steak to skillet. Toss to coat in garlic butter.
Serve hot with extra herbs or lemon if desired.
