1 pound ground beef
1 cup fresh spinach finely chopped
3 cloves garlic minced
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
2 tablespoons milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil optional for browning

Instructions

  • Preheat oven to 400°F.

  • Wilt and drain spinach if using fresh.

  • Combine beef, spinach, garlic, breadcrumbs, Parmesan, egg, milk, salt, and pepper.

  • Mix gently and form into meatballs.

  • Place on baking sheet and bake 18 to 22 minutes.

  • Broil briefly for extra browning if desired.

  • Serve warm.
