A creamy, spicy, baked sushi roll in casserole form — this spicy salmon sushi bake is easy to make, fun to eat, and perfect for sharing.
2 cups cooked short-grain rice
2 tbsp rice vinegar
1 tbsp sugar
1 tsp salt
1 ½ cups cooked flaked salmon (fresh or canned)
1/3 cup Japanese mayo
2–3 tbsp sriracha
2 oz cream cheese (optional)
1 tsp soy sauce
1 tsp sesame oil (optional)
Optional toppings: shredded mozzarella, furikake, scallions, sesame seeds
Cook rice and season with vinegar, sugar, and salt. Spread in greased baking dish.
Mix salmon with mayo, sriracha, cream cheese, and soy sauce.
Spread salmon mixture over rice. Top with furikake and cheese if using.
Bake at 400°F for 12–15 minutes, then broil 1–2 minutes for golden top.
Cool slightly and serve with roasted nori, avocado, or cucumber.
