Easy Pineapple Chicken with Rice – Sweet & Savory One-Pan Dinner features tender chicken, juicy pineapple, and fluffy rice cooked together in a flavorful sweet-savory sauce.
1 1/2 pounds boneless skinless chicken breasts or thighs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
3 cloves garlic minced
1 teaspoon grated fresh ginger
1 1/2 cups fresh pineapple chunks
1 red bell pepper sliced
1 1/2 cups jasmine rice uncooked
2 1/2 cups chicken broth
3 tablespoons low-sodium soy sauce
1 tablespoon honey
2 green onions chopped
Season and sear chicken until golden, then remove.
Sauté garlic and ginger.
Add pineapple and bell pepper and cook briefly.
Stir in rice, broth, soy sauce, and honey.
Return chicken to skillet.
Cover and simmer 18 to 20 minutes.
Rest covered for 5 minutes.
Fluff rice, garnish, and serve.
Drain canned pineapple well if using.
Adjust sweetness to taste.
