A quick and healthy stir fry featuring chicken, garlic, lemon, and colorful veggies. Fresh Mediterranean flavor in under 30 minutes.
1½ lbs boneless chicken breast, thinly sliced
2 tbsp olive oil (divided)
3 garlic cloves, minced
1 red onion, sliced
2 bell peppers, sliced
1 cup cherry tomatoes, halved
1½ tsp dried oregano
1 tsp dried basil
Salt and pepper, to taste
2 tbsp lemon juice
2 tbsp chopped fresh parsley (for garnish)
Heat 1 tbsp olive oil in a skillet over medium-high heat.
Add chicken, half the herbs, salt, and pepper. Stir fry 4–5 minutes. Remove.
Add more oil, sauté garlic, onions, and peppers for 3–4 minutes.
Add tomatoes and remaining herbs. Cook 2–3 minutes until blistered.
Return chicken, add lemon juice, stir well. Cook 1–2 more minutes.
Garnish with parsley and serve.
Great over quinoa or greens. Add feta or olives for variation.
