Creamy Herb Chicken with Mashed Potatoes & Glazed Carrots: A Complete Comfort Food Dinner features tender chicken in herb cream sauce served with smooth mashed potatoes and sweet glazed carrots.

For Mashed Potatoes:
2 pounds potatoes peeled and cubed
4 tablespoons butter
1/2 cup warm milk
1/2 teaspoon salt

For Glazed Carrots:
3 cups sliced carrots
2 tablespoons butter
1 tablespoon honey
1/4 teaspoon salt
1 tablespoon chopped parsley optional

For Chicken:
4 boneless skinless chicken breasts
1 tablespoon olive oil
3 cloves garlic minced
1 cup chicken broth
1 cup heavy cream
1/2 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 cup grated Parmesan
1 teaspoon salt
1/2 teaspoon black pepper

Instructions

  • Boil potatoes until tender and mash with butter and milk.

  • Sear seasoned chicken until golden and set aside.

  • Sauté garlic, add broth and cream, then herbs and Parmesan.

  • Simmer sauce and return chicken to skillet.

  • Cook carrots in butter, add honey and salt, and glaze until tender.

  • Serve chicken with sauce over mashed potatoes and carrots on the side.

Notes

Simmer sauce gently to avoid curdling.
