Juicy chicken and tender potatoes slow-cooked in a creamy garlic-Parmesan sauce — the ultimate cozy, no-fuss comfort meal made in the crockpot.

Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts

  • 1 ½ lbs baby potatoes, halved

  • 5 cloves garlic, minced

  • 1 cup chicken broth

  • 1 tsp Italian seasoning

  • 1/2 tsp salt, 1/2 tsp black pepper

  • 1/4 tsp red pepper flakes (optional)

  • 3 tbsp butter, cut into pieces

  • 3/4 cup grated Parmesan (divided)

  • 1/2 cup heavy cream

  • Fresh parsley for garnish

Instructions

  • Season chicken with salt, pepper, and Italian seasoning.

  • Add potatoes, chicken, garlic, broth, seasoning, butter, and 1/2 cup Parmesan to crockpot.

  • Cover and cook on LOW 6–7 hrs or HIGH 3–4 hrs.

  • Stir in cream and remaining Parmesan. Cook 15–20 mins more.

  • Garnish and serve warm.

Notes

  • Add spinach or kale during last 30 minutes.

  • Use half & half for a lighter version.

  • Reheats well for up to 3 days.
