2 lbs boneless, skinless chicken thighs or breasts
1 ½ lbs baby potatoes, halved
5 cloves garlic, minced
1 cup chicken broth
1 tsp Italian seasoning
1/2 tsp salt, 1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
3 tbsp butter, cut into pieces
3/4 cup grated Parmesan (divided)
1/2 cup heavy cream
Fresh parsley for garnish
Season chicken with salt, pepper, and Italian seasoning.
Add potatoes, chicken, garlic, broth, seasoning, butter, and 1/2 cup Parmesan to crockpot.
Cover and cook on LOW 6–7 hrs or HIGH 3–4 hrs.
Stir in cream and remaining Parmesan. Cook 15–20 mins more.
Garnish and serve warm.
Add spinach or kale during last 30 minutes.
