Tender grilled chicken souvlaki skewers served with a vibrant Greek salad, full of fresh cucumbers, tomatoes, olives, and feta. A healthy, flavorful Mediterranean dinner made in under 45 minutes.
For the Chicken:
1 ½ lbs chicken breast or thighs, cubed
3 tbsp olive oil
Juice of 1 lemon
3 garlic cloves, minced
1 ½ tsp dried oregano
Salt and pepper
(Optional) 1 tbsp red wine vinegar
For the Salad:
1 cucumber, sliced
1 pint cherry tomatoes, halved
¼ red onion, thinly sliced
½ cup kalamata olives
½ cup feta cheese, crumbled
2 tbsp olive oil
1 tbsp lemon juice or red wine vinegar
½ tsp oregano
Salt & pepper
Marinate chicken with oil, lemon, garlic, oregano, salt, and pepper for 30 min–6 hours.
Prepare Greek salad by combining veggies, olives, and feta. Toss with oil, lemon/vinegar, and seasonings.
Thread chicken onto skewers. Grill 8–10 mins, turning occasionally, until cooked through.
Serve with salad, pita, and tzatziki.
Add grilled vegetables to skewers if desired.
Use a grill pan or oven broiler if no outdoor grill.
