Soft, fluffy buns filled with spicy dynamite-style chicken, mayo, and melty cheese — these Cheesy Dynamite Chicken Buns are oven-baked and perfect for snacks, lunchboxes, or parties.
Dough:
3 cups all-purpose flour
1 tbsp sugar
2¼ tsp active dry yeast
1 tsp salt
¾ cup warm milk or water
2 tbsp butter or oil
1 egg (optional)
Filling:
2 cups cooked shredded chicken
2 garlic cloves, minced
½ cup mayonnaise
2 tbsp chili sauce or Sriracha
1 tbsp ketchup
½ tsp paprika or cayenne
Salt and pepper to taste
1 cup shredded mozzarella or cheddar
Topping:
1 egg (for egg wash)
Sesame or nigella seeds (optional)
Extra cheese (optional)
Mix warm milk, sugar, and yeast. Let foam. Add flour, salt, butter, and egg. Knead until smooth. Rise 1 hour.
Sauté garlic, add chicken, sauces, and spices. Mix in mayo and cheese. Chill.
Divide dough, fill each round with chicken mix. Seal and place on tray. Rise 30 mins.
Brush with egg wash, top with seeds and cheese.
Bake at 375°F for 18–22 mins until golden. Cool slightly before serving.
